Hot sauce is a versatile condiment that can add a fiery kick to your favourite dishes. While store-bought options are readily available, there's something truly special about crafting your own homemade hot sauce. This is exactly how I started my journey 20 years ago when I discovered that the meagre selection in the local grocers just wouldn't cut it any more! By making your own, you have full control over the ingredients and can customise the flavours to suit your taste preferences. In this blog post, I'll take you through a step-by-step guide on how to make a simple hot sauce at home, allowing you to elevate your culinary creations with a personalised touch.

The Ingredients
Chilli Peppers: Choose your preferred chilli peppers, such as jalapeños, habaneros, cayennes, serranos, Thai bird's eye chilli or even go all out with some Carolina Reapers, depending on the desired heat level.
Vinegar: White vinegar, apple cider vinegar, or rice vinegar work well.
Aromatics: Garlic cloves, onions, and/or ginger can be used to add depth and flavour.
Salt: Opt for classic table salt, sea salt or pink Himalayan salt.
Optional Flavour Enhancers: Lime juice, lemon juice, herbs, spices, or fruits can be incorporated to personalise the taste.
Equipment
Making hot sauce at home is a pretty simple process but you'll need a few bits of equipment in the kitchen before you begin.
Blender or Food Processor: To puree the ingredients.
Gloves: To protect your hands while handling chilli peppers. This is especially important!
Saucepan: For heating and simmering the sauce.
Sterilised Glass Bottles: To store your homemade hot sauce.
Funnel: To get your hot sauce into the bottle
Step #1 - Preparation
Put on gloves to protect your hands from the chilli peppers.
Wash and sanitise all the equipment and glass bottles to ensure cleanliness.
Step #2 - Pepper Selection
Choose the chilli peppers according to your desired heat level.
Remove the stems and chop the peppers into smaller pieces for easier blending.
Step #3 - Blending
In a blender or food processor, combine the chopped peppers, aromatics (garlic, onions, ginger), and any optional flavor enhancers.
Blend until you achieve a smooth consistency.
Step #4 - Cooking
In a saucepan, pour the blended mixture and add vinegar and salt to taste.
Heat the saucepan over medium heat and bring the mixture to a gentle simmer.
Allow the sauce to cook for about 10-15 minutes, stirring occasionally.
Step #5 - Adjusting the Flavour
Taste the hot sauce and adjust the flavours according to your preference.
If the sauce is too spicy, you can add more vinegar, citrus juice, or even a small amount of sugar to balance the heat.
*If you find your sauces are too hot, you can also bulk out the sauce using a combination of chilli peppers and bell peppers which will accentuate the natural flavours of the chilli but temper the heat*
Step #6 - Bottling and Storage
Once the hot sauce reaches your desired flavour, remove it from the heat and let it cool.
Carefully transfer the sauce to sterilised glass bottles using a funnel.
Seal the bottles tightly and store them in the refrigerator.
