Smoky Chip Hot Sauce Chicken Tacos
Ingredients
400g boneless, skinless chicken breasts cut into thin strips
2 tablespoons olive oil
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 cup of my Chip Hot Sauce
Salt and pepper to taste
8 small flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1 ripe avocado, sliced
Additional lime wedges and cilantro for garnish
Directions
In a large mixing bowl, combine the olive oil, lime juice, minced garlic, ground cumin, and my smokey Chip Hot Sauce. Whisk the ingredients together until well combined.
Add the chicken strips to the marinade, making sure they are evenly coated. Cover the bowl with cling film or a lid and refrigerate for at least 30 minutes to marinate. For best results, you can marinate the chicken overnight.
Preheat your grill or frying pan on a medium-high heat.
Remove the chicken from the marinade and discard the remaining marinade. Season the chicken strips with salt and pepper to taste.
Place the chicken strips under the hot grill and cook for about 3-4 minutes per side or until they are fully cooked through and nicely charred. Cooking times may vary depending on the thickness of the chicken strips.
While the chicken is grilling, warm the flour tortillas. You can do this by wrapping them in a clean kitchen towel and microwaving them for about 30 seconds or heating them directly on the stovetop over low heat.
Once the chicken is done, remove it from the grill and let it rest for a minute before assembling the tacos.
To assemble the Smoky Chip Hot Sauce Chicken Tacos, take one warm tortilla and place some shredded lettuce on one half of the tortilla. Add a few pieces of the grilled chicken on top of the lettuce.
Top the chicken with diced tomatoes and avocado slices. You can also add a drizzle of extra Chip Hot Sauce for an extra kick.
Fold the tortilla over the filling to create a taco shape. Repeat the process with the remaining tortillas and ingredients.
Serve the Smoky Chip Hot Sauce Chicken Tacos on a platter, garnish with lime wedges and fresh cilantro, and enjoy this flavorful and spicy meal with family and friends!
