Newfoundland Diagnostics - Feel The Burn -

Introducing the world's first hot sauce concocted to mimic the burning sensation of a UTI, created with at-home health testing kit experts Newfoundland Diagnostics.
To bring attention to the issues and stigma behind the overwhelmingly common UTI I teamed up with home testing company Newfoundland and developed a hot sauce designed to mimic the painful symptoms of urinary tract infections (UTIs), a condition that predominantly affects women but is often downplayed by men.
Moot Brewery - National Star Wars Day -

Inspired by the iconic universe of Star Wars, this collaboration with Moot Brewery combined the force of craft beer with the intensity of hot sauce to create a taste sensation like no other. Together at Moot's Microbrewery in Kent, Founder Calvin and myself brewed up the Limited Edition pastry stout that became the centerpiece of my journey into the Mexican world of Mole sauces.

The Beer - Utinni
A rich pastry stout with full on caramel, slightly salty miso and a big hit of peanut butter! Chocolate, sweet lactose and hints of coffee are the backbone for this flavour packed beer.

The Hot Sauce - Togu Togu
A decadent chocolate, miso and peanut butter chilli sauce reminiscent of a rich Mexican Mole dish that delivers a symphony of taste sensations, from the deep richness of caramel to the umami complexity of miso and the nutty sweetness of peanut butter.

I’ve been entrusted by legendary Chef and fire cooking enthusiast Matthew Burgess to oversee the production of of 3 of his fantastic chilli sauces, including the 2 Star Great Taste Award Blak Fire! Matt’s culinary journey spans top establishments in both Wellington and London. Additionally, he runs his own food consultancy business, Kaiwhenua (meaning “Food from the Land” in his native Maori), and represents high-profile brands like Big Green Egg. Now, you can find his sauce in several high-end retailers, including Selfridges, Provenance Butchers, Hg Walter, and Big Green Egg.
Sweet & Chilli - Air Mary Bloody Mary Mix -

This was a new avenue for me as I took on the scale up development and production of a spicy Bloody Mary Mix with Sweet & Chilli as part of their Christmas corporate gifting strategy. There's a really fun bit of history to this mix as the original recipe was devised by one of the founders who wanted to enjoy a really good in-flight Bloody Mary when they traveled and would take a small bottle of the mix onboard.
Air Mary won a Gold Medal at the 2024 IWSC (International Wine and Spirits Awards) too and it's incredible to know that something I helped develop and bring to market has gone on to gain such a prestigious award!
Green & Hilse - Santorgreeni Wedding Favours - Sep 2023
In the picturesque setting of Santorini, Greece, where love and beauty merge, I had the privilege of producing a special wedding favour – a hot sauce that captured the essence of the romantic couple. Our journey began with selecting the finest sun-kissed green Jalapeno chillies and infusing the sauce with a "French" amount of garlic as briefed by the bride; who's roots lie in the South of France.
The production process was a labor of love, reflecting the couples commitment to each other. Our artisanal approach ensured that every bottle was crafted with precision and care. Each label was customised with a play on their names combined with the island paradise, making it a cherished keepsake for their guests.
As the couple exchanged vows against the backdrop of the stunning Santorini sunset, our hot sauce favour symbolised the union of two hearts, just as our ingredients blended harmoniously in each bottle. It was a small, yet meaningful reminder of a day filled with love, flavour, and the beauty of Greece.
Craft Beer Cabin - 5th Birthday Sucker Punch - Aug 2023
Craft Beer Cabin is a taproom serving craft beers, natural wine and small batch spirits located in the heart of South Norwood's, Highstreet. To celebrate the 5th birthday of Craft Beer Cabin, I produced a limited edition Lime and Ginger hot sauce using Nick's (owner) Lime and Ginger infused Lover Fighter Liquor as inspiration. On the day, Little Mouse, the neighbouring cheesemonger offered a killer celebratory cheese toastie which paired incredibly with the zesty, fiery sauce and mild citrussy punch. It was a match made in heaven and a birthday to remember!
Guzzl - Guzzalo Project -

Guzzl in Brixton Market were one of my very first stockists way back in 2018 and have been supporting me with advice and repeat custom ever, since so we decided it was high time we joined forces and created something truly special for their customers. An exclusive buffalo sauce was the order of the day!

Guzzl has its own hot sauce and it is an absolute snorter! Guzzalo is jam packed with ripe, red cayenne peppers carefully balanced with oregano & honey to gently seduce your taste buds. But be prepared for a boar's kick in the chops from the healthy dose of habanero chilli. Wings will never be the same again!

Hop Burns & Black - Deptford Project -

For my second Hop Burns & Black collab, I was tasked with creating a sauce for their Deptford shop's Birthday. HBB wanted a Bajan style sauce with a fruity twist, so I set to work on creating a banging base using fermented yellow habanero chillies with turmeric and mustard before playing around with a number of different exotic fruits. I finally settled on a trio of fruits that really let the base shine without being overwhelming. The Deptford "Super Fruity Hot Sauce" was born!

This sauce contains unreal levels of fruit. Starting from a spicy Bajan-style base, we've then thrown lashings of mango, pineapple and passion fruit on top. Sweet, hot, delicious. #SouthLondonBestLondon
Hop Burns & Black - Peckham Project - May 2023 - Ongoing
For this cheeky collab, I put my head together with the legends Hop Burns & Black. They asked me to develop a classic Scotch Bonnet sauce that represented their delightful store in Peckham. The challenge with this sauce was finding the very best Scotch Bonnets I could. Some may think that every chilli is equal but sadly this is not the case! Eventually I managed to source some absolute gems from a farm in Rwanda where only the best can be found. These chillies really made the sauce shine.

This sauce - made with our south-of-the-river pal Lazy Scientist - is fruity and punchy, with the vibrant zestiness of fresh Scotch bonnet peppers. You'll want to use this on everything, but especially burgers or anything chargrilled. #SouthLondonBestLondon
Gym Box - Ring of Fire Project -

After one of the hottest summers on record, fitness freaks GYMBOX brought the heat back by challenging brave Brits to feel the burn with the World's hottest gym class, "Ring of Fire", combining chilli eating with working out.
Starting with a ginger shot and squats 'warm up', the burn in body, mind and mouth increased as participants took on the heats. Starting with Jalapeño spice paired with reverse barbell lunges, the intensity increased all the way up to the world’s hottest chilli, the infamous California Reaper - coming in at a whopping 2.2 million Scoville Heat Units (SHUs) - before taking on a 700M bike sprint!

Participants of this whacky event all received a Limited-edition Lazy Scientist x GYMBOX "Ring of Fire" hot sauce. For this finale I went with a curry spiced peach number packing some serious heat from the Carolina Reaper chilli and a good dose of homegrown Apocalypse X powder!

Brixton Chamber Orchestra - Charity Collab - July 2022 - Ongoing
For this project I partnered with another local Brixton Charity, the Brixton Chamber Orchestra to produce a hot sauce that they could use to raise some funds during their Summer Estates Tour 2022.
The orchestra is a versatile group of instrumentalists which provides thrilling live orchestral experiences for wide-ranging audiences in Brixton and beyond. They champion orchestral music, presenting it to new audiences in unexpected venues, revelling in innovative collaborations with all sorts of artists and genres - Grime to Gospel, Disco to Drum and Bass, Classical to Jazz, and everything in-between.
They appear all over Brixton - in the market, pubs, clubs, parks, churches & community centres. Sometimes performing symphonies as a full 30-piece orchestra and twice a year, they tour Lambeth's housing estates, performing eclectic programmes to hundreds from the local community.
They are Brixton's own orchestra - a product of local talent and the unique blend of creative energy and cultural diversity which characterises the area.
I have now produced and donated over 500 bottles to this incredible cause.
Butter Up Coffee - Coffee Sriracha - Jun 2022
For this collaboration I partnered with one of my favourite stockists in Tulse Hill, London. Together with Matt and Jam of Butter Up Coffee we devised a KETO fermented coffee hot sauce with a big hit of scotch bonnet heat and depth from horseradish and turmeric that would work really nicely as a dip or better yet as a Buffalo style hot sauce when mixed with melted butter.

Butter Up do Keto, with their signature BUTTER UP Coffee; a unique way to explore the Keto diet for the first time.
Having personally tried their coffee I can vouch for their Butter Up being a big hitting dose of caffeine and delicious fats to really get you going and carry you through the day!
Brixton Streetwear - Charity Collaboration -

In Partnership with the mighty Brixton Streetwear crew I came up with two sauces based on the brief "Famous Golden Arches - Sweet Curry Dip". This is an ongoing project with all profits going to the Brixton Soup Kitchen Charity.

Brixton Soup Kitchen is a community space for homeless people or people in desperate need. The Soup Kitchen provides food, drink and companionship in a warm and friendly environment on a weekly basis. They have served over 20,000 meals either eaten on site or distributed during food drop offs and outreach sessions, all made possible with the donations and support from local community members as well as local businesses.

It's been amazing to be part of such a worthwhile cause and give a little something back to the local community where Lazy Scientist Sauces began.

The Virginia BBQ In A Box - Fathers Day -

I partnered with Catoctin Creek Distillery in Virginia and Tom Hixson of Smithfield to create a limited edition Father’s Day gift - a Virginia-style BBQ party in a box. The box had everything you needed to recreate an authentic Virginia style barbecue at home. Three limited edition rye-based hot sauces, a bottle of award-winning rye from our friends at Catoctin Creek Distillery and our friends at Tom Hixson chose the best American-style meat cuts to accompany them. Customers also received a Spotify playlist, instructions for Cornhole (a traditional Virginia garden game), recipes for sides and cocktails and more…The Virginia BBQ In A Box was not just a unique and fun gift but also incredible value for nearly 5kg of meat, as well as the rye, sauces and added extras, comfortably serving six people.
This project was featured in Sloan Magazine, Hotelier & Hospitality, Restaurant Update, Eat-Drink-Sleep and Foodie Explorers.
